Going Loca for Meximama

I was invited to have dinner at Meximama – a cool Mexican diner in Mactan, Cebu. It’s located behind the SM Supermarket right across Marina Mall.

Chef Victor – yes, chefs run the place – offered to treat us to some of their dishes.

They have a wide selection of Mexican food and they all come at very affordable prices!

In fact, their portion sizes are quite big! They’re readily enough for four people!

We started with a bucket of Nachos and salsa

The bucket of Nachos is so good! I definitely noticed the difference in taste compared to other Mexican restaurants. For one, the nachos are definitely “homemade”. They’re definitely not a pack of Nachos bought from the supermarket and cooked for the guests. The texture and the taste has been tested and they’re definitely much different. For one, the nachos are definitely crispier. I can distinctly taste the pepper and the salt. Plus the salsa complements the chips really well.

They also asked us to try their elotes. It’s like corn on a cob but smaller and with more spices.

What makes the elotes taste so good is the mix of Mexican spices such as cilantro, coriander, salsa roja, and sour cream. The flavors just blend so well together that one stick isn’t enough!

Of course, we have to leave more space in our stomachs because there’s still so much more to fit in there.

They handed us a new set of Nachos, this time with a queso fundido dip.

The dip consists of mozzarella, cheddar, quickmelt, fresh milk and jalapeño.

Trust me, it tastes as good as it looks.

Up next is the chorizo empanada!

The empanada consists of homemade Mexican chorizo, potatoes, and, of course, three cheese!

What’s three cheese? Why, it’s the golden ratio of mozzarella, quickmelt, and cheddar, of course!

Up next is the chimichanga !

This got me real excited because I love chimichanga! It’s my favorite Mexican food.

Their version of the chimichanga is deep-fried, unlike how other restaurants cook their chimichangas. Theirs is home-cooked and you can definitely determine this from the taste. I’ve tasted a lot of chimichangas from Mexican restaurants here in Cebu, but this one is my favorite, so far.

Up next is the Carne en Salsa. The dish consists of Angus beef, Mexican chilis, orange, and tomato sauce.

This is the part where Chef Victor introduced us to their collection of Mexican spices, freshly imported from Mexico!

They even gave us a quick CHILI 101 Lecture by showing us the different kinds of chilis they use for each dish.

I’m quite sure this is why the Carne en salsa tastes so good. The spices blend so well together but they don’t overpower the dish.

Of course, dinner wouldn’t be complete without deserts! Naturally, Mexican dinners wouldn’t be right without churros!

To add a Filipino touch, we also had leche flan!

The Leche flan uses the tres leches (three milk) formula and primarily consists of milk custard with Mexican canella and custard sauce.

It’s not as sweet as the usual Filipino leche flan, hence is balanced and not too sugary. This is perfect for me because I’m not a very big fan of sweets and if a dish is too sweet I’d get tired of it. This is also perfect for people who can’t eat too much sweets but would still like a bit of desert.

The same could be said for the churros.

The dips aren’t too sweet and the churros compliment the leche flan quite nicely. We could eat it together with the leche flan, or on its own. It tastes great either way.

In the end, there was so much food, I felt bad that my stomach couldn’t handle any more because the food is so good!

You know that feeling you get when you’re just so full, you can’t handle any more, but there’s still so much food left and you know they taste so good but you can’t do anything about it?

That’s how it was for me. Pure torture. I knew I wanted to continue eating..but, damn it, my body is weak!! Haha The next time I go there, I’ll be better prepared. There will be more space for the food next time!
